Table cheese and semi-cooked pasta produced using cow's milk from a territory defined by the Asiago PDO specifications. The rind is thin and elastic; to take on the red color it is treated on the surface with colored paraffin which improves its shelf life. The paste is white or slightly straw-yellow in color with marked and irregular holes.
