Hard chhese with cooked pasta, compact with a friable and soluble structure. The taste is firm ad markedly fruity, but never spicy, and this makes the cheese unique and unmistakable. Left to mature for more than 180 days, the rind becomes smooth, regular and of intenseocher color; the intense straw-yellow paste with a light and characteristic peeling; the holes are absent.
