Hard cooked cheese, offered in different seasonings; Piave Mezzano cheese is aged for 61 to 180 days. The rind is soft and clear in the fresh type and increases in thickness and consistency with increasing aging. The pasta, always compact and without holes, is very clear in the fresh type and acquires an increasingly intense color in the most advanced seasonings.
