Typical Italian cheese from the Veneto region. The term d'Allevo means aged, in the case of Monte Veronese D'Allevo Mezzano the minimum ripening is 90 days. The rind and the dough are of a more or less intense yellow color, depending on the period of production. The paste becomes hard and slightly grainy with the ripening. It has a more decisive and savory flavor, typical of aged chesse, which tends to become spicy with the protrusion of the ripening
