Gorgonzola is a cheese present all over the world and an expression of Made in Italy par excellence. It was produced for the first time in the late 9th century, near Milan, in the town of Gorgonzola, from which it takes its name. Initially it was called "stracchino verde", because it was made with the milk of the cows "stracche", that is "tired" that from the Prealpi descended to the lowland to repose.
We have our own selection of Gorgonzola, called Verde Crema which, for more than 50 years, is highly appreciated and sought after by consumers.
With the Gorgonzola Dop we produce the "Gorgonzola al Mascarpone" in our Villafranca di Verona establishment. It is a fresh dairy product, composed of 60 % Mascarpone and 40 % of Gorgonzola Dop, obtained through a process of stratification between Mascarpone and Gorgonzola, without any subsequent treatment, if not packaging.
Gorgonzola is a straw-yellow raw cheese, whose green streaks are due to the process of marbling, or mold formation. A creamy and soft presence with a particular and characteristics flavor. We have our own selection of Gorgonzola, called Verde Crema, which has been much appreciated by consumers for over 50 years.
